Pineapple Margarita


3⁄4 oz Freshly Squeezed Lime juice
1⁄2 oz Ancho Reyes Verde Poblano
1⁄2 oz Lightly Peated Islay Scotch Whisky
1 oz BBCo Origin Series Bottled-in-Bond
1 oz Pineapple syrup with Maple syrup, Ginger and Orange



Garnish: rim with a blend of dried rosemary, salt, and crushed black peppercorn with a lime wedge

Pineapple Syrup Instructions

1 1⁄2 cups of fresh pineapple juice 1⁄2 cup of Maple syrup
1 cup of white sugar
1⁄4 cup of ginger juice
1⁄2 of a sliced orange
1 cinnamon stick, 4 whole allspice, and 5 whole clove

Add all ingredients to a pot, and cook until sugar is dissolved. Don’t let the mixer boil. Strain and cool.
